I don't use dnsmasq (I'm still using isc-dhcp-server), but NetworkManager logs quite a bit to the system journal (journalctl to view). It's actually quite helpful in sorting out network configuration issues.Next time I have to do anything with networkmanager, I will start by finding out how to make it log.
As far as isc-dhcp-server going away, there is a new dhcp server, kea, which is in bookworm. I haven't looked at it much, but need to do so and add support to https://github.com/gitbls/ndm (which already supports isc-dhcp-server and dnsmasq)
Lastly, although isc-dhcp-server is EOL, I would expect it to continue at least through Trixie, and perhaps longer, since it is so widely used. Moving all to kea or other dhcp servers will take years.
