I had "mashed-up" a rather lengthy procedure for getting GStreamer + OpenCV to work together in C++ for both RPi4B and RPi5. Perhaps you can check it out to see if this approach can help you. For example I can get 640-x480 at 200 fps with the PiCamera V2 on an RPi4B with 8 GB.
