I think the issue is that you ran out of RAM.
One of the changes in bookworm is that dpkg uses multi-threaded xz decompression by default now. That ends up using a lot more RAM than you'd see on bullseye.
That should've been fixed here, but that change isn't in the last set of images.
You could get around it by upgrading raspberrypi-sys-mods and restart before doing a full upgrade.
