Also, you can, and probably should require sudo users to need a password as shown in the 2nd link above.
I'm sure you could add a root user, then remove other users from the sudoers group, then just run su. I agree with you that this might be more secure, but I have not heard of major security issues either.
Of course it is not about whether we trust a user, it is about worms and rootkits that may take advantage of defaults.
