Another update from my side (seems to fixed the freezes):

The SSD was 1TB Crucial (by Micron) P2 M2 2280] https://www.amazon.de/-/en/gp/product/B ... UTF8&psc=1 with a ANYOYO USB adaper: https://www.amazon.de/-/en/gp/product/B ... UTF8&psc=1. I cloned the content of the SSD on a Seagate Baracuda Compute HDD of 1TB.
And the server hasn't froze for at least 24 hours now, which with the SSD never happened (freezes were happening at around 4 hours with SSD)
In my opinion this rules out any OS or software issues with my setup, and points to the SSD as the most likely cause.

But this is strange, as I said up until a couple of weeks ago, this SSD setup worked perfectly with a RPI4.

So, to find out exactly if the SSD issue is on my side or on RPI firmware side, I will install the SSD back on the RPI4 and see if it freezes there also.
If not, I would say this points to an obvious flaw in the RPI5 firmware related to SSD.
