I agree Arducam cameras can be frustrating. Having to use their version of libcamera-apps was a pain.I think I'll give up experimenting with the different cameras and stick with the Rapberry V3 camera until the HQ camera works outside.
I use the camera to watch birds at the feeder. The V3 is not bad for that.
Things have improved slightly with the Pi5 and the imx519.json tuning file in that you can now use the Pi rpicam-apps and with a bit of work get the Arducam 16MP (and possibly the 64MP) to work in manual as well. And not been automatically detected is a disappointment. For an easier life and support I would recommend sticking with Pi cameras. I think the v3 AF is faster.
I find the Arducam 16MP gives good stills but the video is soft.
For the wildlife in our garden I use the GS cameras, I think they give better video than the HQ, although having 1920x1080 would be good.
I use this... https://github.com/Gordon999/Pi_Videoer , should work with an Arducam 16MP camera in AF
