THE USB3 spec realised getting 5V @ 5 amps down a USB-C cable was fairly untenable so they widened the voltage spec so that at 5 amps the far end of the cable will still be in spec.having used the pi5 some, with a variety of cables and supplies, and thought about it more
i think even a 5v/5a psu wouldnt do, even with a fairly decent cable
you need 5.1v, and thats feels a bit weirder, where the sink asks for 5, and you give it 5.1
Realistically, the voltage probably drops below 5V when drawing 5 amps so you aren't really providing 5.1V.
