Don't touch the boot order until you know all is working and you perfectly know what you're doing!..
rpi-eeprom-config :
boot_order=0xf416
pcie_probe=1
..
As you're having 'pcie_probe=1' in the EEPROM config you should get rid of below (they are the same btw)
Pi5 PCIe is not certified for gen3. It works by chance, but you will have to start on the default gen2 --> change to..
dtparam=pciex1
dtparam=nvme
..
..
dtparam=pciex1_gen=2
..
Makes me laugh my a** off! What are you using? Which kind of evidence do you have they are compatible (note: I had WD SN530 in fron of me where one was working and two not. Was a firmware issue with the two drives; luckily that could be fixed).A. Not a SATA
B. Compatible
C.- D. I have tried 3 different hats and ribbon cable with the same result. Wired correctly.

Post a picture and/or link to the products website (of the manufacturers web site).
Don't mix&match interface cables! Might be a pretty bad idea!
Sorry to say, but for third party support you will have to ask the manufacturer/seller of the product to support. Hence I will only consider the official M.2 HAT+...
Raspberry Pi's official hat
