Don't touch the boot order until you know all is working and you perfectly know what you're doing!

As you're having 'pcie_probe=1' in the EEPROM config you should get rid of below (they are the same btw)

dtparam=pciex1
dtparam=nvme

Pi5 PCIe is not certified for gen3. It works by chance, but you will have to start on the default gen2 --> change to
..
dtparam=pciex1_gen=2

A. Not a SATA
B. Compatible
C.- D. I have tried 3 different hats and ribbon cable with the same result. Wired correctly.

Makes me laugh my a** off! What are you using? Which kind of evidence do you have they are compatible (note: I had WD SN530 in fron of me where one was working and two not. Was a firmware issue with the two drives; luckily that could be fixed).
Post a picture and/or link to the products website (of the manufacturers web site).
Don't mix&match interface cables! Might be a pretty bad idea!

Sorry to say, but for third party support you will have to ask the manufacturer/seller of the product to support. Hence I will only consider the official M.2 HAT+.
