To the best of my knowledge there is nothing in Raspberry Pi OS that would attempt a reboot for any reason other than user request. Even in the event of a kernel panic, the default behavior is to halt, not reboot.
Unless you are using a non-standard image, or have configured something unusual that specifically relates to rebooting, the most likely cause of an unexpected reboot is simply that the board lost power at some point.
