I thought of that as well, although my impression was that OP wanted to embrace Wayland.A thought occurs: if you're more familiar with X and don't want to deal with Wayland, sudo raspi-config is able to switch between the two. Look under "Advanced Options".

And, if you want an easy way to build Pi disks configured exactly as you want, perhaps including Xwayland (or X11 if not?), simh, etc. have a look at https://github.com/gitbls/sdm. It makes building new Pi disks fun and far less time-consuming.
