As you can see on the attachment I have the original Pi 5 27W power supply for Europe, I think there is something wrong with EU plugs because before buying this I used another usb-c power supply with more power than this and I had the same issues.
What do you mean by "... something wrong with EU plugs ..."?
Would it be purely physical and mechanical?
How is the mains (230V) wiring?
Or is there maybe something unusual with the mains voltage levels ? The Pi5 indicates not, so I actually don't know how that could be.

Issue that I can think of is that you have some nasty loop: HDD PSU, Pi PSU, HDMI monitor PSU and all the needed cables. USB cable and/or HDMI cable could be part of a loop.

If in doubt, I use a separate (car) battery with DC-DC module to deliver 5V to the Pi and a USB2serial cable (3 wires) from Pi GPIO pins to laptop USB port with disconnected charger.
